It’s a spare parts brew! The point of the first attempt is to experiment with spicing a mead and I think every subsequent one will also be some form of test brew or getting rid of spare honey.

Ingredients

  • 2.5 lbs Wildflower Honey
  • 0.75 lbs frozen mixed berries
  • 1.625 lbs frozen peaches
  • 4 tbsp Black tea
  • 1 1/2 stick cinnamon
  • 6 whole cloves
  • 1/2 tsp cardamom
  • 6 allspice berries
  • 2.4g K1-V1116 yeast
  • 1 tsp pectic enzyme
  • 1/2 tsp Fermaid-O Nutrient
  • 1 Gallon Filtered tap water (got a new brita!)

Recipe

  1. Sanitize equipment using Star-San
  2. Add honey and ~1/4 Gallon of water to the fermenter, use bung to close the top of the fermenter and shake until combined. ~4 min
  3. Mash fruit and add to the fermenter
  4. Add Black tea, Pectic enzyme, Fermaid-O to the fermenter
  5. Top with spring water until there’s a reasonable amount of room left for the fermentation
  6. Pitch yeast according to the package and add to the fermenter
  7. Seal using a sanitizer filled airlock and set in a dark cool place

After Stabilization add spices to brew bag and submerge in the fermenter, remove after 3 days
