3/29/25 - Starting Brew, 1.102 SG. This should have the ability to hit 13.3% ABV. The drill tool that I picked up at Beer Meister is the best thing ever.
4/21/25 - Second attempt has gone waayyyyyyy better than the first. I followed the tosna schedule and it did ferment for longer than I expected but It appears fermentation has completed I need to stabilize it and backsweeten now planning to do that in the next couple days.
Iām wondering if i should add more pectic enzyme at this point to try and clarify the brew.
5/18/25 - Stabilized the mead over the last 2 days and sweetened it today, Final Gravity 0.994 meaning the ABV pre-sweetening is 14.18%
Sweetened with 3/4 cup of honey mixed with 1/2 cup of water which yields a final ABV of 13.15%
Yield is 5 and a half bottles.
